The RaspberryPi, as well as the BeagleBoard/BeagleBone look like really
interesting devices, and have a huge potential for this type of project.
One of the issues from memory with the Raspberry Pi is that it uses a
linear regulator. This can be fixed, and there are well known hacks for it.

Aprx looks like it might be ideal for what you are wanting to do. Add the
digikey COM board and you are set.
