Bluetooth GPS data loggers are now cheaply available (I picked up one  
new on eBay recently like this for about $45), which will record up to  
90,000 timestamped positions (or so the manual says), at preset time  
or distance intervals. If your laptop has Bluetooth, it works nicely  
with UI-View.
